What makes a potato recipe actually repeatable vs. just technically correct?
Plenty of potato recipes are well-documented but never get made twice. Curious what separates the ones that actually repeat. Is it that the potato is doing irreplaceable work, or is there something else, technique, proportion, simplicity, that keeps pulling you back? Skeptical that documentation quality alone explains it.
